Pineapple & Mango Salsa (a la Lauren) ;)
1 Whole Pineapple
1 Ripe Mango
1 Bundle fresh Cilantro
1 Fresh Jalapeno Pepper
1 Can of Black Beans (Rinsed and Drained)
Juice of 1 Lime
Salt and Pepper to Taste
OK...it's really easy to put together.
Basically, we've all seen/eaten salsa, so we know that you can make it as chunky or as smooth as we like...I will let that up to you. So, chop up the ingredients to your desired size and mix together well. Add the salt and pepper at the end, using sparingly at first. Why? Flavor intensifies over time.
Also, I recommend (as I have done) making this at least 6 hours ahead of time...or even the day before. Why? The flavors will blend themselves together tonight making the overall finished product much tastier!
