Success with vegan brownies!!! =) [x-posted from my journal]

I'm not sure why, but brownies are one of the few things that have never quite turned out right for me, since I began baking as a vegan. The texture never quite was what it should be. However, I'm excited to say that I have conquered this problem!

~ 1/4 tub of Earth Balance Buttery Spread, softened
~ 1 cup brown sugar
~ 1/2 cup Florida crystals (or regular granulated sugar)
~ 4 tsp Ener-G egg replacer + 6 Tbsp water
~ 1 tsp vanilla extract
~ 1 tsp baking powder
~ 1/2 tsp salt
~ 1/2 cup cocoa powder
~ 1 and 1/4 cups flour
~ 3/4 cup Tropical Source chocolate chips
~ 3/4 cup chopped pecans

Cream together the Earth Balance and sugars.
Add the egg replacer and vanilla and beat until well combined.
Add the baking powder, salt, cocoa powder and flour and beat until just combined.
Stir in the nuts and chocolate chips.
Spread into a 9" square pan (I greased the sides and lined the bottom with parchment).
Bake at 350 degrees for about 35 minutes.
Cool and cut into squares.

With thanks to kittee, who inspired me to experiment!
