Roast a cup of sooji (cream of wheat or coarse semolina) over medium heat, and set aside.
Heat some oil (2-4 tbsp?) in a saucepan on medium heat.
Pop 1 tsp. black mustard seeds and 1 tsp. cumin seeds in the oil.
Add one or two chopped green chilis
Add a spoon of urad dal and/or some broken cashew pieces.
Add a pinch of turmeric and a pinch of hing.
Add five or six curry leaves and 1/4 cup chopped cilantro.
Add one chopped onion (and any veggies you want).
Cook until the onion is done.
Add 1/2 tsp salt and 2-3 cups of water.
Bring to a boil and stir in the roasted sooji.
Let it boil for a minute or two, then turn down the heat and cover it.
Cook until done (~5-8 minutes).
Garnish with coconut, chopped cilantro and a squeeze of lime.
