2-3 ripe tomatoes, diced
1 large bell pepper, diced
1/4 red onion, diced (or to taste)
1 can black (turtle) beans, drained, or 1 1/2 cups or so cooked black beans
2 cloves of garlic, minced
minced fresh cilantro to taste
(finely chopped spiced olives and marinated artichoke hearts - added just 'cause they were there)
juice of 1/2 a lime
a few dashes hot sauce
Mix it all together in a big bowl and adjust as you see fit. My avocados are rock hard, or else i would have thrown one of them in as well. When it's ready, scoop a bunch of the salsa over a healthy bowlful of shredded lettuce, stir it up and enjoy!
If you served this over tortilla chips with guacamole, it would make the most amazing vegan taco salad EVER.
