squash corn fritters

I kind of created this after my grandma sent home clam fritters with my mom. My mother reccomended using the squash instead of zucchini. I loved it. So did my vegetarian, and nonvegan friends;)

Squash-Corn Fritters!

2 nice sized squash- grated (food processor)
1/2 cup drained corn
1 egg replacer (I used 1/4 flour and 2 pinches of baking soda)
2 tbsp olive oil
1/2 cup flour (or as much as you need to make the mixture thick)
2 tsp onion powder
1 tsp sugar (I used xylitol)
1/2 tsp sea salt
1/2 tsp pepper
(I also added curry powder to spice it up a bit)

Mix all ingrediants together. Fry in 1 tbsp olive oil until golden brown(or burnt however you like it)

This is a very easy and fast meal. It's filling and sooooo delicious!! I usually heat up the remanding corn and that's my meal! I also throw some hot sauce on the bun:)
