BBQ Seitan with Farmer's Market Potato Salad








BBQ Seitan
2T olive oil

1.5c seitan, sliced into bite-sized pieces
1/4 of a large onion, chopped

1/4c your favorite BBQ sauce

Heat the oil on medium-high. Add the onions and seitan. Cook for a few minutes, then add the BBQ sauce. Cook until the onions look all done.




Farmer's Market Potato Salad
2 pounds red potatoes, cooked, cooled and diced
1 small bunch each fresh sage and tarragon, chopped fine
1/2c onion, diced fine
1/2 of a purple pepper (tho I'm sure you could use any colour you like), diced fine
1-2 T Nayonaise (more or less, depending on how gooey you want)
1/4c olive oil
salt and cayenne pepper, to taste

Combine everything in a big ol bowl and eat!

I bet celery would have been nice in this, but I didn't have any....

The side salad is just mixed field greens with diced tomato and vinaigrette.
