Peach, Arugula and Nasturtium Baguettes
a ripe peach
fresh nasturtium blossoms
Section a baguette, slice lengthwise and spread. Drizzle the bread with balsamic vinegar and layer with thinly-sliced peach and arugula leaves. Top with naturtiums and close. Serve as soon as possible.
diced ripe peach
fresh organic greens
Toss and dress with, for example:
grapeseed or olive oil
a few shredded fresh basil leaves OR a handful of blueberries, blended (more as needed)
Peach Avocado Salsa
several ripe peaches
a red or orange pepper
half a smallish red onion
two or more ripe avocados
one or two tomatoes
a handful of cilantro
mix and dress with fresh lime juice to taste. Serve with tortilla chips.
