Peaches, peaches, peaches!

We're in the midst of a peach frenzy in my house right now. Here are a few recipes that have debuted over the last three days. I can't post the cobbler recipe because my roommate made it and is away for the weekend, but I promise you it's delicious.


Peach, Arugula and Nasturtium Baguettes

a ripe peach
fresh arugula
fresh nasturtium blossoms
a baguette
balsamic vinegar

Section a baguette, slice lengthwise and spread. Drizzle the bread with balsamic vinegar and layer with thinly-sliced peach and arugula leaves. Top with naturtiums and close. Serve as soon as possible.



Peach Salad

So simple...

diced ripe peach
fresh organic greens
sunflower seeds
nasturtium blossoms
(grapes)

Toss and dress with, for example:
maple syrup
balsamic vinegar
grapeseed or olive oil
a few shredded fresh basil leaves OR a handful of blueberries, blended (more as needed)



Peach Avocado Salsa

dice finely:
several ripe peaches
a red or orange pepper
half a smallish red onion
two or more ripe avocados
one or two tomatoes
a handful of cilantro

mix and dress with fresh lime juice to taste. Serve with tortilla chips.
