Hello everyone, this is my first post in the community, though I've been watching it like a hawk for quite a while. I've been in a baking frenzy lately, making four cakes and two batches of cookies in the past two weeks. I have pictures to show for a few of my works!
For Canada Day I made the star-shaped strawberry-lime cake and brought it to a party where it impressed all the folks and delighted two other vegans whom I met that night. There was enough batter left over to make cupcakes too! I used the recipe for Strawberry Lemonade Cake that was in the memories, and simply adapted it for limes instead. When I went to make icing I realized *gasp* there is no icing sugar! So I attempted to powder some regular sugar in my wee little food processer, threw in some tofutti cream cheese, some coconut, some lime juice, and it came out pretty good if I may say so myself.
Then I decided to try Kittee's chai cake. There is a buttercream/mocha filling between the layers, and a richly chocolately icing on the outside. I make all my icings on the fly so I'm not sure exactly the proportions of everything. Ah, and toasted almonds to decorate ^_^
I wish I'd taken more pictures of things but everything kept getting eaten!
