limey spicy orange juice chili

my mother has been making a lot of chili lately and since i just got a job that i dont get home from until dinner time I often eat the premade chili and so i found this to be a really easy meal to prepare ahead of time. this morning i made the chili that'll last the next few days and i thought i'd share with you a recipe i think is really quite sublime.

one onion (doesnt matter what kind) chopped
1/2 cup of mushrooms chopped
2-3 tablespoons of olive oil
~~~toss in a pot on medium low heat and let simmer for about 5 minutes.
next toss in a few chopped sprigs of cilantro and thyme.
1 tbsp cayenne and 2 tbsp chili powder and 2 tbsp crushed red pepper flakes
~~~~stir and set for a minute or two while you open your cans.
next add one 28 oz can of chopped tomatoes
and one small can of tomato paste
~~~~~~~~~~~let this come to a boil over medium low heat for about 15 minutes.
turn the heat down and add one can of pinto beans and one can of navy beans (or whatever beans you want really) along with 1 cup or 2 packages of vegan burger crumbles.
~~set for one to two minutes
empty one lime into the mixture
3 tbsp raw sugar and half a cup of orange juice
~~~~~set for 15 minutes
you might need to sprinkle in some salt.
turn the burner on low and let it simmer for 15 minutes more before bringing it off the heat.

and remember to let it cool down before you store it in the refridgerator so as not to encourage growth of bacteria. when ya eat it you can pour it over some rice or some pasta to be more filling. but i think it's fine on its own.
