Mango-fried-tofu salad with chili-lime dressing

My friend and I made this last night for a potluck, and it vanished.

The salad
2 cups chopped (between bites and dice) mango, preferably Manilla variety
1 lb. tofu, cut in dominos and deep-fried, or a pound of tofu-age; cut dominos in half lengthwise before adding to salad
1 cup jicama, cut small (think thick, short matchsticks)
1/2 cup whole, toasted, unsalted cashews
1/2 cup cilantro, coarsely chopped
1/3 cup very thinly sliced red onion

The dressing
Juice of two limes
Several shots tamari--probably about 1/4 cup
1 Tbsp. palm sugar (or other sweetener) or to taste
Several shots chili oil (I think minced jalapeno would be great, too)

Toss everything together and try hard to wait at least 30 minutes (tossing occasionally) for the flavors to soak in.
