1/2 cup brown sugar
1/2 cup granulated sugar
2 tsp Ener-G egg replacer + 2 tbsp water
1 tsp vanilla extract
1 tsp peppermint extract
1 and 1/2 cups unbleached white flour
1/4 cup unsweetened cocoa
1 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
Preheat oven to 350. Line cookie sheet(s) with parchment paper.
Cream together margarine and sugars until fluffy.
Beat in egg replacer + water. Stir in vanilla and peppermint extract.
Add in dry ingredients. Stir until well combined.
Drop by rounded teaspoons onto cookie sheets.
Bake 12-15 minutes. Remove and cool on a rack.
These taste best chilled. We eat them straight from the fridge!
