1/2 small onion, very coursely chopped
1/2 sweet red bell pepper, very coursely chopped
1/4 cup of cooked chickpeas (canned + drained is fine), or more if you prefer
olive oil for sauteeing
salt + pepper to taste
1 tsp soy sauce to add at very end, optional
Heat 1/2 tbs of olive oil over medium heat and proceed to sautee onions and red peppers until the peppers begin to brown, about 10 minutes. Salt and pepper. Add chickpeas and cook for additional 2-3 minutes. When chickpeas are heated through, add soy sauce and allow to boil off while stirring vegetables.
Eat hot or cold.
