your favorite veggies (I used eggplant, yellow squash, zucchini squash, carrots, spinach, and celery)
tofu or other protein if youd like (I used light life chik'n strips)
red pepper flakes

I pan-fried the lightlife strips and the veggies (other than the celery leaves and spinach) in the olive oil with some sea salt and red pepper for a few minutes. Then I added a little bit of water, maybe 1/2 a cup, and a teaspoon of curry paste. I let that simmer, adding in about 2 tablespoons of the dried coconut about half way through, until most of the water was gone. I also added a bit more sea salt and red pepper. When there is just a bit of water, add about 1/4 cup soymilk. I did not serve it with rice because it was too late for me to make any, but it was still pretty good.
