airplants are cool, but solitude is better.

I was trying to make a lighter version of a Thai curry version. I'm not sure how much healthier it actually was, but I was pretty pleased with the results.

your favorite veggies (I used eggplant, yellow squash, zucchini squash, carrots, spinach, and celery)
tofu or other protein if youd like (I used light life chik'n strips)
red pepper flakes
thai curry paste
olive oil
sea salt
soy milk
dried coconut

I pan-fried the lightlife strips and the veggies (other than the celery leaves and spinach) in the olive oil with some sea salt and red pepper for a few minutes. Then I added a little bit of water, maybe 1/2 a cup, and a teaspoon of curry paste. I let that simmer, adding in about 2 tablespoons of the dried coconut about half way through, until most of the water was gone. I also added a bit more sea salt and red pepper. When there is just a bit of water, add about 1/4 cup soymilk. I did not serve it with rice because it was too late for me to make any, but it was still pretty good.
