Soy-Free California Burgers

Today I devised a soy-free alternative to Dr. Praeger's California Burgers. (If you haven't heard of them, imagine a veggie burger where you can actually make out the individual types of vegetables.)

1 cup cooked chickpeas
1 cup cooked brown rice or kamut
1 cup corn
1 cup peas
1 cup minced onion
1 cup steamed broccoli
1/2 cup corn meal
1/2 cup oat bran
2 tbsp cornstarch
2 tbsp olive oil
2 tbsp dried parsley
1 1/2 tsp salt
1/2 tsp garlic powder
pepper (to taste)
  • Blend ingredients in a food processor until just combined.
  • Shape into burger-sized patties.
    • Option 1: Fry in an oiled pan on medium-low heat until golden brown on both sides.
    • Option 2: Bake for 30 minutes (turning once, halfway through) at 400 degrees F on a lightly oiled cookie sheet. For a crispier texture, broil for a few minutes per side after baking.

I fried some and they turned out well; unlike my previous homemade veggie burger experiences, these seemed to stay together a lot better. I baked the rest and I'm going to freeze them for later use.
