Spicy Curried Lentils

This is one of those recipes that happens when I have very little food in the house.  I was pretty happy with it, tho!

1 c lentils
1 T curry powder
1 T tumeric
2 t cayenne pepper

1/2 onion, sliced in rounds
4 celery stalks, diced
4 cloves garlic, minced
2 T margarine
splash of red wine

1 c veggie broth
1 c water
handful of fresh cilantro, torn up
1/3 c dried coconut

In a crock pot, mix the lentils with the spices.

In a skillet, heat the margarine and fry the veggies  until the  onions soften.  Add the wine and cook until the liquid reduces, maybe 5 minutes?  Dump  this in with the lentils and add the rest of the ingredients.

Cook in the crock pot on high for about an hour, then reduce to low for 2 hours more.  If the lentils are still crunchy, give them a little more time.

This would be really nice over spiced coconut rice.  Maybe with some raisins or currants stirred in?
