I am looking to put together an amazing fruit and veggie muffin recipe with lots of room for substituting. Here is it as it stands:
3/4 cup sugar
1/4 cup oil
1 1/2 cups pureed fruit (last time I used 1/2 cup applesauce and two large mashed bananas, next time I will throw in some pineapple or some pureed peaches)
2 1/2 cups shredded veggies (summer squash, zucchini, carrots)
2 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
Any dried nuts and fruits you want.
Mix the sugar and oil. Add the fruit and veggies. Mix the dry ingredients and stir them in.
Last time I made it, I think it needed some vanilla and cinnamon. I will add a tsp of each next time I make it.
Bake in oiled muffin tins at 350 for about 30 minutes.
Also, as a tip, shredded veggies freeze great. So if you are trying to use up an explosion of squash, you can freeze then in containers to make these muffins and defrost them when ready to bake.
