carrot black bean burritos

we just got a food processor last week......... i LOVE IT!!!!!!!!
we've been making all sorts of yummy things with far fresher ingredents than we used to (because of all the prep work)

so when we were making burritos... we didn't have any fake meat or anything.... so i had the crazy idea to make it with carrots. i know, i know..... it was suuuuper!

black bean carrot stuff
2 tbsp canola oil
4 large carrots
1 can of black beans, drained
2 tsps cumin
1 tbsp chili powder
pinch of chipotle powder (optional)
3 shakes of frank's red hot sauce (2 teaspoons worth?)

scrub the carrots and whiz through your food processor equipped with the shredding blade. dump everything into large pan and cook, stirring occasionally for about 15-20 minutes.

while carrot mixture is cooking, make your guac.
(my processor has a smaller bowl that fits inside the larger vessel. if you will have to use the same container for cutting your tomato and lettuce, i suggest doing the next step before the guac.)

1 avocado
2 cloves garlic, peeled
1 medium tomato
splash of lemon juice
juice of 1/2 lime

cut the avocado in half, remove the pit and scoop the flesh into the processor bowl equipped with the chopping blade. cut your tomato into 1/4s, remove the stem section and cut each 1/4 in half. drop that into the processor along with the garlic. whiz until smooth, add the juices and whiz to incorporate.

rinse a head of romaine lettuce and wash a medium tomato. cut the tomato into 1/4s and cut the stem section out. cut the end off of the lettuce. whiz both through your processor equipped with a slicing blade.

warm your flour tortillas in a pan, assemble and eat. yum.
