Golden Syrup Dumpings, Scalloped Potatoes, and Satay Sticks.

Me and my girlfriend just ate the best dinner, well, definatly the best dinner in the last week. All of the recipes were adapted (well, veganised) out of a book called PMWU centenarary cookbook. All the ingredients seemed pretty easy common things to find, which was good. The recipes are behind the cut. We were gunna take photos but i forgot and just started eating, because it looked soooo good.

Something i missed after being vegan was scalloped potatoes, but never thought to veganise them til now-

Scalloped Potatoes


500g all purpose potatoes (a pound is 600g)
3 tablespoons Flour
Salt and Pepper
1 cup of soy milk (we used Bonsoy which tastes really milky, i think a really soyish tasting milk might not be as good)
2 tablespoons nuttlex/vegan margarine
A paper bag, or plastic oven bag

Preheat the oven to 180 C/roughly 360F. Peel the potatoes and cut them into thickish slices (i recken about 2-4mm is good). Put flour, S+P and potatoes into large paper/oven bag and shake well. Layer potatoes into a greased casserole dish. Heat milk and butter together in a saucepan. Pour it over the potatoes. Cover and bake for 1 hour. For the final 15 minutes take the lid off and maybe turn it up a bit (about 230C or 445F).

Satay Sticks

Basically this recipe is just for a marinade, then add tofu and whatever vegies u want.

about 250g tofu
1 tablespoon rice syrup (or use honey )
1 tablespoon golden syrup
1 and a half tbs soy sauce
Salt and pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp oil
2 tsp lemon juice

Combine syrup, soy, s+p, cumin, Coriander, lemon juice and oil. Mix it up and marinade cubed tofu in it for at least 30 min. Stick them on skewers with cut up vegies. We used little mushrooms and red capsicum. Grill or BBQ for 10 mins or so, turning a few times until they look good.

Satay Sauce (to go with satay sticks)

1Tbs smooth Peanut Butter (less sugary one is better)
1/2 - 1 clove of garlic
1 Tbs lemon juice
1 tsp vegetable oil
1 Tbs soy sauce
2 tsp brown sugar
A litte vege seasoning powder (we just added this in)

Blend it in a blender. Add water if its too thick, then add more PB if it gets too thin. Pour into a small bowl.

Golden Syrup Dumplings

1 cup Self Raising Flour
2 Tbs Vegan Margarine
A little soy milk
1 cup of water
1 Tbs golden syprup
1/2 cup sugar
juice of one leomon

Rub butter into flour. Mix into a stiff dough with a little soy milk. Form into balls (ours made about 10 balls) Bring water, Syrup, sugar and lemon juice to the boil. Drop dumplings into boiling syrup and cook for about 20 minutes with the lid on. Serve with soy ice cream and use some of the hot syrup as a sauce. These were sooo good..
