1/3 cup organic cane sugar crystals
1/4 cup corn starch
1/8 teaspoon salt
2-3/4 cups soy milk
1 teaspoon vanilla
3 Tablespoons tapioca
1/4 cup frozen blueberries
1/4 cup non-dairy chocolate chips
In medium saucepan combine sugar, corn starch, tapioca, and salt. Gradually stir in milk until smooth.
Stirring constantly, bring to boil over medium heat and boil 1 minute. Remove from heat.
Stir in vanilla and blueberries. Pour into serving bowls. Cover; refrigerate.
Add chocolate chips before serving.

When I made this I left out the blueberries, so the vanilla was very strong. I liked it that way but it could be overpowering to some.
Too bad it's all gone now :(
