vegan lasagna with zucchini, 'beef' and vegan ricotta



need:
lasagna pan
tomato sauce (homemade or storebought..i used homemade)
tofu
basil
lemon juice
olive oil
zucchini
smart ground original flavour
follow your heart vegan gourmet mozzarella
salt
lasagna pasta

thinly slice the zucchini and heat in a pan with olive oil until soft. meanwhile boil the pasta to perfection.

crumble up the tofu and add lemon juice, a dash of salt, olive oil, and basil. this is yr ricotta

place three sheets of pasta on the pan and cover with sauce. add zucchini and then another layer of pasta. more sauce, and the 'ricotta'. then more pasta, more sauce, and the veggie ground round. keep going until you run out of ingredients. it should end with pasta, then sauce, then shredded vegan gourmet.

heat in the oven at 475 until the mozzarella melts

it's a pretty simple recipe and it should come out looking like this:
