Tequila-Lime "chikn" strips

I made this totally delicious meal the other day, but my boyfriend and I ate it all before I thought about taking a picture, haha!

Here's the recipe:

Cilantro-Tequila-Lime "Chik'n" Strip Salad

(sorry that the measurements aren't exact...)

One Package Light Life Chik'N Strips (http://www.lightlife.com/chickstrips.html) (I found that one package can feed about two people)

Half a bunch chopped cilantro (or to taste)

1/8-1/4 c Tequila (to taste)

1/8-1/4 c Lime Juice (to taste)

handful of mixed greens per person

1/4 c shredded carrot per person

three large-ish tomato wedges per person

pepitos, flax seeds for salad garnish

salt and pepper, to taste

Annie's Cilantro-Lime Dressing (Optional)

1. Marinate the chik'n strips in the tequila-lime-cilantro mixture for about fifteen minutes.
2. Pan fry chik'n with a little olive oil over high heat until cooked through. May need to add lime juice and cilantro to maintain moisture.
3. Serve over mixed greens and shredded carrot. Add tomato wedges, flax seeds, pepitos, salt and pepper.
4.Drizzle some Annie's cilantro-lime dressing over salad, if desired.
5. Enjoy!

I am definitely making this stuff again. It would be good in a pita, over rice, or in tacos! You could even skip the tequila and only do a cilantro-lime chik'n and I'm sure it would be just as tasty!
