Nondairy scalloped potatoes

I'd like to note that this was my first vegan cooking success! This is easy enough for beginners (as I can attest) and oh so tasty. It looks pretty healthy as well (I think, correct me if I'm wrong). It's from an old paperback book called The Complete Guide and Cookbook for Raising Your Child as a Vegetarian" by Michael and Nina Shandler.


For children who do not eat dairy products, this dish can provide an extra boost of protein with the goodness of potatoes.

1 qt water
5 potatoes, thinly sliced
2 onions, sliced into rings
2 tbsp whole wheat pastry flour or brown rice flour
2 tbsp corn oil
1 tbsp nutritional yeast
1/2 tsp salt
1/4 tsp black pepper
1 1/2 cups soy milk

Bring water to a boil. Cook potato slices in boiling water until translucent, about 5 minutes. Drain and rinse with cold water.

Preheat oven to 375 degrees

Spread a thin layer of potatoes over the bottom of a lightly oiled casserole dish. Top with a later of onions. Sprinkle with flour, oil, east, salt, and pepper. Repeat layers until all ingredients are used. Poor soy milk over casserole. Bake for 45 minutes until potatoes and soft. Serves 4.

Sorry, no camera means no photo. I used red onions that ended up turning a funny color while cooking anyway but it was still good!
