I made this meal for dinner tonight. I have been craving pancakes like nobody's business!!
(esp after the girl posted about her cruise!!)
Chocolate Chip Pancakes
2 1/4 cup flour (more if mixture is runny)
1/2 tsp salt
1/2 tsp cinnamon (optional)
1/2 cup vegan chocolate chips
2 tbsp canola oil
3 tbsp vegan sugar
1 1/2 cup water
Mix flour, salt, cin, sugar together, add water, oil, and c.chips.
Spray pan with cooking oil. I made one pancake at a time because I had a small pan.
Makes about 10 large pancakes.
Gimme Lean Sausage, and Smart Bacon were used in the photo.
For the Deep Fried Tofu, I didn't really use a recipe. I kind of remembered all the ones I read on here.
Tofu + bread crumbs + flour + water + cayenne pepper + pepper + oil
Garlic-Buttered Mashed Potatoes
4 medium potatoes peeled and cut into 4 chunks (or smaller)
2 tbsp soy milk
3 tbsp vegan butter (or more to taste)
1 tbsp garlic powder (or more to taste)
pinch of salt
1/2 tsp pepper
Boil potatoes until soft. Drain. Put potatoes back in the pot, mash. Add soy milk, stir. Add vegan butter, garlic, salt and pepper, stir.
These are really easy and tasty. I know when I'm hungry I don't feel like cooking a huge meal, or do anything too time consuming.
