Use enough udon noodles for one person and follow the directions on the package. Set aside.
1 Medium yam chopped into about 1/2" pieces
1 Medium stalk of broccoli in florets (I'm not sure if this is the right terminology)
Handful of snow pea pods
1/2 Large white onion chopped into 1/2" pieces
1 shallot chopped into 1/2" pieces
1/2 Large red pepper seeded cut into strips
1 Medium carrot chopped into "pennies"
Cook the yams and carrots in boiling water until cooked feeling but not falling apart. After cooked, add them to the other veggies in the frying pan. In a medium frying pan, sautee the veggies with about a Tbs. of sesame oil (you could use olive, but the sesame gives it a nice Asian flavor) and a Tbs. of Bragg's with two cloves of minced garlic.
Perfect Peanut sauce (I modified this recipe from The Garden of Vegan by Tanya Barnard and Sarah Kramer):
For one serving:
1/2 cup coconut milk
1/4 cup peanut butter (I like chunky)
1/2 tbsp Bragg's
1/2 tsp rice vinegar (I made it without this and it was fine)
1 tsp Asian chilli sauce (or less if you don't like it spicy)
1/2 tbsp liquid sweetener
1/4 tsp dried red pepper flakes
1-2 tbsp water if you think it's too thick
Combine all in a bowl and warm over med.-low heat before serving.
Put the noodles on a plate, add veggies, and top with sauce. Mix and enjoy!
If I left out anything, please let me know. I'm new to writing out my recipes.
PS I wrote this out in the middle of eating it. Turns out I could only eat half of this, and I hadn't eaten all day. So if you're just making it for yourself, you may want to half everything, depending on your appetite. :)
