Pumpkin Crepes

Yesterday we welcomed Halloween and Fall by drinking pumpkin shakes. This morning I made this yummy and filling pumpkin crepes.

Use Webly's Crepe Recipe.
Pumpkin Filling: Pumpkin puree, sugar/maple syrup, all spice, cinnamon, agar agar/corn starch.
Top with melted tofutti cream cheese and garnish with a sprinkling of cinnamon.

1 3/4 Cups Flour
1 1/4 Cups Liquid (apple juice, water, soy milk...)
4 Tablespoons Maple Syrup
1 Tablesppon Baking Powder
1 1/2 Cups Soy(/Rice/Oat/Nut) Milk
4 Tablespoons Oil
1/2 tsp. Cinnamon
Pinch of Salt

Mix all together until the bumps and lumps are gone.
Ladle a small amount into a warm frying pan. Pick up the pan and rotate until the batter doesn't spread anymore and let cook on one side until the other side is done.

Notes:
This make enough to feed a ska band (AKA A LOT).
Depending on how you like your crepes, you might want some more liquid.
