2 eggs worth of egg replacer mixed up
1 teaspoon vanilla essence
2 tablespoons vegan butter
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons cinnamon
2 teaspoons nutmeg
3/4 cup of brown sugar
1 cup wholemeal self raising flour
1/4 cup of a mix of wheatgerm and oats (can be omitted and more flour added)
1 1/4 cups soy milk
2 cups carrot, grated
Combine all ingredients. Cook in 325 C oven for about 45 min.
Take out and let cool.
My icing I didnt measure but it had vegan butter, a little lemon juice, tofutti cream cheese and icing sugar.
