Portobella Burritos and Mouth Melting Nachos

No pictures, I was too hungry, but this is what I had for dinner and a late night snack tonight.


Portobella Burritos

1 can vegetarian refried beans
1 can black beans, drained and rinsed
1/2 a green pepper, chopped
about 1/3 cup red onion, chopped
2 chili peppers, chopped (I forget the name of the ones I used. They were the hottest ones I could find at the grocery store, anyway)
about 1/2 tsp each garlic powder and cumin

Sliced portobella mushrooms, about 2 slices for each burrito
Flour tortillas
Tofutti sour cream
mixed baby greens

Dump the beans, peppers, onion, garlic, and cumin in a saucepan and put on low heat, cover, and stir every few minutes. While that's heating, put slices of portobella in a frying pan on low heat, 2 for each burrito. When it's almost done, nuke your tortillas or heat them in the oven for a minute or two.

Layer the portobellas, bean mixture, sour cream, and greens, fold up, and enjoy.

Save the bean mix for leftovers and nachos.


Mouth Melting Nachos

Leftover bean mixture
Plate full of tortilla chips
Tofutti sour cream
Mrs. Renfro's Green Salsa (Which is usually a lot hotter than this jar is. Maybe I got a dud batch, or they went and changed the recipe on me)

Fill your plate with tortilla chips, pile a bunch of the leftover bean mix in the middle, and nuke for 2-3 minutes. Plop some sour cream on top of the beans, then drench in green salsa. If your salsa isn't a dud, and you used chilis in the beans, these will be some darn good, and hot nachos.

My omni brother in law was ribbing me about getting heartburn and being punished later, on the terlet, but really, this was nothing. Haha. Tummy. Of. Steel.
