Recipe (originally adapted from the Ecological Cooking Cookbook)
2 cups wholemeal flour.
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
5 tbsp vegan margarine
1/3 c. sugar
3 bananas well mashed
1 cup soya yoghurt
Lightly grease a loaf pan
Pre-heat oven to 175 degrees Celsius (350 degrees F).
In a large mixing bowl stir together flours, baking powder and bicarb of soda. Set aside.
In a separate medium sized bowl, cream the margarine and sugar well.
Stir in mashed bananas and soya yoghurt. Mix well.
Pour into flour mixture and mix thoroughly (you may need to add a little soya milk if it's too thick)
Pour into loaf pan.
Bake 40-50 minutes
It's really easy and ended up lovely and moist and very scrummy! I put less sugar in that the original recipe as I don't like it too sweet. I also missed out the apple sauce, soya milk and vanilla essence and used all wholemeal flour.
