2 cups flour
1/2 tsp salt
3 tsp baking powder
1/2 cup sweetener ( I used maple syrup)
egg replacer[to equal 2 eggs] ( I use Ener-G)
1/4 cup oil
3/4 cups sour soy milk (add 1 tsp vinegar to soy milk)
1 cup mashed banana (about 2 bananas)
Vegan chocolate chips (I threw in about 2 handfuls)
Preheat oven to 350f. In a large bowl, stir together the flour, salt, and baking powder*. Add the sweetener, egg replacer, oil, sour soy milk, banana, and chocolate chips. Stir together untill just mixed*. Scoop into lightly oiled muffin tins and bake untill tester comes out clean and tops are golden brown.
I used the paper muffin tins so I got about 13 muffins but if you use a regular muffin pan it makes about 6 very large muffins.
*Mix the dry ingredients before you add the wet ones.
*Dont over mix.
[You can really use any fruit in here just use about 1 and a half cups of it.]
