Pressure Cooker Kedgeree/Kitchiri/Kitchari

Whatever you call it, here's my pressure cooker riff on a recipe I was given the other day - a mildly spiced kedgeree:

1 cup green lentils (masoor dhal)

1 large/2 medium onions, diced
2 large/3 medium cloves garlic, pressed
Olive oil for frying

2 cups wholegrain brown rice
4 cups vegetable stock [bouillon]
6 cardomom pods
¼ tsp cloves
1 tsp cinnamon
4 tsp ground coriander
4 tsp cumin seeds

4 tbsp tomato paste
Salt and ground black pepper

Chopped coriander [cilantro], 1 bunch

* Cover lentils with water for 30 minutes
* Drain, add more water, boil 10 minutes and drain again
* Fry the onion and garlic in oil for a few minutes, until opaque
* Place in pressure cooker with rice, stock, and spices, and stir well
* Bring to high pressure and cook for 20 minutes
* Quick release
* Add paste, lentils, and seasoning
* Bring to high pressure and cook 5 minutes
* Allow to slow release
* Check seasonings, add salt & pepper to taste

Optional: Add diced smoked tofu or vegetables with lentils, paste, and seasoning.
