Making Boxed Cakes

I made a Duncan Hines spice cake yesterday using Dr. Pepper in place of the water. It came out quite good. It's probably the softest most moist cake I have ever come across. The only problem is that it is very crumbly and it sort of fell apart when I took it out of the pan. I did use powder egg replacer in it as well as the amount of oil it said to add on the box. Maybe I should have left out the oil. I think next time I will use apple sauce and see how that works. The box gave directions on how to make a spice applesauce cake, anyway, which sounds really good.

I also made my own icing because I generally don't like store bought icing. And the packaged frosting has about a bajillion weird ingredients in it, also. I think I should probably get a good recipe for vanilla icing, though. I can make chocolate just fine, but when I do vanilla I sort of just wing it. I take about 1/3 cup of shortening and about three tablespoons of margarine and mix it with about 3 cups powdered sugar, 1/3 cup soy milk, and 1 tsp vanilla extract. Maybe I should just add more butter to make it more creamy and not so overwhelmingly sugary.

And lastly I have been wondering, what is the easiest way to tell someone to make a vegan cake? Can a cake just be made with a can of soda and the cake mix or would the cake just all fall apart? I would think the easiest way would be to tell them to do the can of soda along with applesauce or a banana. I just don't know if that would really hold the cake together or not.
