cupcakes and pasta bakes!

a variety of delicious vannilla cupcakes, using a veganized version of white cupcakes, from the "hey there cupcake" decorative cook book. Variations with chocolate fudge frosting topped with coconut or orange/purple "dots". Some with sky blue vanilla whipped frosting with coconut or white "dots". And orange, orange-vanilla whipped frosting (vanilla +1/2 tsp orange extract) with black sugar sprinkles. the coconut chocolate one was unfuckingbelievable. Mmmm.

My pride and joy. Okay, let me admit something here. I usually HATE that crap fake cheese sauce. It always tastes like dirty socks to me, so I usually can only eat it if it's mixed with loooads of salsa. But we decided tonight that I would "wing it" and sort of make up my own version of it, and then cover the whole thing with some vegan gourmet cheddar cheese. it. was. amazing. Honestly, this was so similar tasting to cheese, I could have given some to cheese-eaters and they wouldn't have known the difference. Since I was sort of making it up as I went along, I was only taking mental notes and estimations (I really wasn't expecting it to be so good). Nate ate 1/2 of this ALREADY! Anyway, here's what we did:

heavenly baked macncheese

1 box elbow noodles
1 package vegan gourmet cheddar (you can really do without this, or use any flavored/brand soy cheese in place)

Cook the noodles and shred the soy cheese and then prepare the "sauce"

Boil 1/2 cup of water, and 1/4 cup of margerine with about 1/4 cup of white flour. Whisk this, and then add two "shakes" of garlic powder(probably about a teaspoon), and a quick shake of mustard powder (1/2 tsp). Then add about 2 tsp salt and 1/2 cup of nutritional yeast. Whisk all this nice and good (if it's a big chunky, add just a bit more of water). Now here's the"key ingredients". 2 tsp of braggs liquid aminos, 3/4 cup of toffutti sour cream, and a chopped clove of garlic.

We also stirred in a little bit of the cheddar shreds just for affect, but it didn't melt.

Drain the noodles and mix with the cheese sauce (Nate was also convinced that adding a package cubbed pieces of yves soy ham would make this phenomenal. And he was right), and put into a lasagna dish pan. Cover with the shredded cheese, and put foil over the top. Bake it at 350 for 25 minutes.

Eat. And DIE from how amazing this shit is. Sooooooooo good.


Thats all I got folks! I am sooo full, but I think I'd better have just one more cupcake before calling it a night.
