I had a bunch of leftover root vegetables from making Vegetable Soup with Herb Dumplings, so I decided to roast them.
Preheat the oven to 400F. I filled a casserole dish with chunks of root vegetables (turnip, parsnip, carrot, and sweet potato). Then I liberally drizzled olive oil over it, dashed with salt and pepper, tore up peices of chives and threw on top, and then gave a small drizzle of maple syrup. Using my hands I kind of massaged everything together, and baked in the oven for 30 minutes.
