Pumpkin Bread

Pumpkin Bread Pumpkin Bread

From Hot Damn and Hell Yeah!
2 Cups pumpkin, cooked and pureed
1/4 Cup oil or apple sauce (I used oil)
2 egg subs (I used ener-g)
1 Cup White sugar (I'd use a brown sugar split next time I make it.)
2 Cups Flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1/4 tsp. ground ginger
1/2 cup Raisins (I omited this)
1/2 Cup Walnuts (I omited this)

Preheat oven to 175C/350F. Spray loaf pan with non-stick cooking spray and dust with flour.

Mix pumpkin, oil/apple sauce, egg subs and sugar together in a large bowl. In a separate bowl, mix together the flour, baking powder, baking soda and spices. Stir the flour mixture into the pumpkin mixture until just blended. Stir in the raisins and walnuts until even distruted, the pour the batter into the prepared load pan and place in the center of the oven. Bake for 50 min or until a knife inserted center of loaf comes out clean. (Mine took 60 min.)

This was so nice and moist. It stands yp on its own and was gone before I could take a picture of a slice.
