pumpkin spritz cookies

pumpkin spritz cookies

makes 5-6 dozen

1 cup earth balance
1/2 cup sugar
3/4 teaspoon baking powder
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 tsp allspice
1/4 teaspoon ginger
dash of cloves
2/3 cup canned pumpkin
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
nutmeg for tops

cream butter, add sugar and spices / baking powder. beat until combined. beat in pumpkin and vanilla extract until combined. beat in flour. (don't chill.) use cookie press and sprinkle nutmeg on top. bake at 400 F 8 to 10 minutes.
(my cookie press needed 2 presses per cookie. i think that means the dough was too thick? possibly reduce flour to 2 1/2 to make dough thinner. but this was my first time using the cookie press. so maybe it usually needs 2 presses. also, after a few rounds, wipe the grease off of the cookie sheets so the cookies will want to attach more to the sheet than the press.)
