Coconut/mango/blueberry/apricot Spelt Muffins

Right now I'm licking muffin batter off a spoon and telepathicly urging the
experimental batch in the oven to turn out gloriously. Nothing short of glory
will do when it comes to muffins. What type of muffins did I attempt:
Coconut-Mango-Blueberry-Apricot. I based them off a recipe based off a recipe
by Bryaana Clark.

Mix together:

- 2 1/2 cups spelt flour
- 2/3 cup tapioca flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt

Blend together in blender/food processor:

- 500g silken tofu
- 1 cup turbinado sugar
- 1/2 cup coconut milk
- 1/2 cup mango juice
- 2 tbsp. lemon juice
- 3 tbsp. nutritional yeast
- 2 tbsp. vanilla

Stir in 1 cup blueberries and 1/3 cup chopped dried apricots to the dry mixutre.
Gently stir wet and dry ingredients until just mixed. Bake in lightly greased
muffin tins for about 20 minutes at 350 F. Cool slightly before removing from
pan. This recipe was enough to make a dozen gargantuan muffins. They would
really work well with whatever juice/fruit you prefer. They were originally
made with raspberry juice and blueberries with this recipe -->
