They're a genuinely enjoyable way to get some extra fiber.
1 1/2 cups of wheat bran
1 cup soymilk
1 tsp vinegar (I use Apple Cider Vinegar)
1/3 cup vegetable oil
1 egg replacer for baking (I use ground flax seed: 1 Tbsp mixed with 3 Tbsp water. Let sit for 3 minutes)
2/3 cup or less brown sugar (I used 1/3 cup plus 2 packets of Stevia to sweeten)
1/2 tsp vanilla extract
1 cup unbleached flour
1 tsp baking soda
1tsp baking powder
1/2 tso salt
Optional: 1/2 cup raisins or other dried fruit
Preheat oven to 375 degrees F
-Prepare muffin tins with a tiny bit of veg oil followed by a dusting of flour.
-Put the wheat bran in a bowl, pour the soymilk and vinegar in and mix. Let sit for 10 minutes while you do the next steps.
-Put oil, egg replacer, sugar and vanilla in a bowl. Beat it together.
-Sift flour, baking soda, baking powder and salt together.
-Add the oil mixture to the soaked bran and mix together.
-Next add the flour mixture into the wet mixture just until its blended.
-If you're using raisins or fruit fold them into the batter now.
-Spoon the batter into the muffin tins and bake for 15-20 minutes or until a knife inserted into the center of a muffin comes out clean.
