I'm on a mission to find the best biscuit recipe. Suggestions and online recipes are more than welcome, but I thought I'd start with my cookbooks.

First I made the Easy Biscuit recipe from How it All Vegan. They get a B. Maybe a B-. They were kind of heavy, and I like biscuits to be light and fluffy.

Here they are with some yeasty miso gravy on top.

Next I made the Drop Scones or Biscuits recipe from Bryanna Clark Grogan's "The (Almost) No Fat Cookbook," and they get an A. Possibly an A+. They were moist and fluffy and since they had about half the calories of the Easy Biscuits and zero fat, they get an even bigger thumbs up from me.

So here is the recipe:

Preheat oven to 400.
Mix together in a medium bowl:

2 cups flour
1/2 t baking soda
1/2 t salt
1 t sugar
1 t baking powder

Then stir in:

1 1/4 cups reduced-fat (I used nonfat) soymilk mixed with 1 T fresh lemon juice

Stir quickly and drop into greased muffin tins.

Bake for 10-12 minutes.

The recipe said that they would make 14-16 scones but they only made 8 for me.

I highly recommend that cookbook, by the way, since I've made about 6 or 8 of the recipes and they've all been great. The recipe in the book also includes options for making herbal biscuits or adding fruit and spices for fruity scones. Can't wait to try!

Anyway, just wanted to share my results.
