I veganized my grandma's near famous dumpling recipe so that I could add them to some baked potato soup yesterday

Soup Dumplings

-1 cup unbleached flour
-1 Tblspoon cornstartch mixed with 2 Tblspoons water (or your choice of egg replacer for one egg)
-1/2 teaspoon salt
-1/2 Tblspoon oil

mix the ingredients and add small amounts of water until the dough becomes sticky. Don't work it too much (but it's okay if it seems a little tough). Boil a medium to small sized pot of water. Using your 1/4 teaspoon, scoop out small amounts of dough and drop them into the boiling water. In order make this easier, you will periodically have to dip your spoon in oil. It is also good to try to get the dumplings to be about the same size so they will cook evenly. Let them boil for about 15 minutes, then drain and add to soup!

They'd be awesome in almost any soup. This recipe will make you a good amount of dumplings, but if you need a seriously HUGE pot of soup, double the recipe (but be warned...you'll be scooping out dumplings for a long freakin time).
