from the Taste of Oregon cookbook
1 1/2tsp vanilla
2 1/2c walnut halves
1)Combine sugar, water, salt and cinnamon. Boil to the soft ball stage* WITHOUT STIRRING
2)Remove from heat, add vanilla and walnuts. mix well to coat all the nuts and the coating becomes creamy looking
3)Spread out on wax paper to dry, separating the walnut halves as they cool. Store in an airtight container
*Soft ball stage: To check to see if a candy is at the soft ball stage, drop a small amount of the hot syrup into very cold water (I use icewater). It is at the soft ball stage when when you drop it into the water it forms (you guessed it!) a soft ball (although sometimes it won't make an actual ball...Just reach your fingers in and feel the mass.) It will be close to the consitency of warm taffy in the water. DO NOT OVERCOOOK! You must watch the syrup carefully as it can burn quickly! (I wasn't paying close enough attention to my first batch and I pretty much ruined my pot, not to mention filling my house with an amazing amount of smoke and the smell of very burnt marshmellow!) Anyways, once it goes past the soft ball stage, it will be very very hard once it cools. Just something to watch out for...
