Morish Chickpea Spinach Stew

Morish as in "makes you want more", not as in Moorish, this chickpea and spinach stew was inspired by the fact that I had chickpeas, spinach, coconut milk, and some Indian spices. It made enough for about 6 meals.

Morish Chickpea Spinach Stew 1

Couple tbsp olive oil
1 large yellow onion, diced
2-3 large cloves garlic, minced
1/2-1 tsp turmeric
1-2 tsp ground cinnamon
1 tbsp garam masala
Dash salt
1 piece fresh ginger (about the size of your thumb), sliced
1 cup dried chickpeas, cooked (perhaps one can?)
2 x 10oz frozen spinach, thawed (or equivalent)
1 16oz can coconut milk
1 large can crushed tomato
6 cloves
6 cardamon pods
1 bunch fresh coriander leaves [cilantro]
Cooked rice
Salt and pepper to taste

* Heat the oil in a large skillet or pot
* Add onion and cook until softened
* Add garlic, ginger, salt, cinnamon and turmeric, and cook a couple of minutes
* Add chickpeas, spinach, tomato, and coconut milk, cloves and cardamon, and cook on a high heat for a few minutes, then on low-medium for about 20-30 minutes
* Add salt and pepper to taste
* Add coriander
* Add rice, and cook until heated through (about 5-10 minutes)
