Cranberry Nut Bread

My mother made this today and it's delicious (and vegan! go mom!)- it reminds me of the Cranberry-Orange bagels at Bruegger's, only better. It's moist and has an awesome tangy-sweet flavor. This makes a great holiday bread because of the cranberries, too.

2 C all-purpose flour
1 C sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
3/4 C orange juice
1 T orange zest
2 T vegetable shortening or margarine
1 egg replacer (applesauce was used here- 3 T)
1/2 C fresh or frozen cranberries, chopped
1/2 C chopped nuts (walnuts worked perfectly)

Preheat oven to 350 degrees Fahrenheit. In a bowl, mix together dry ingredients. Stir in orange juice, orange zest, shortening, and egg replacer. Mix until well blended. Stir in cranberries and nuts. Pour into a lightly oiled 9"x5" loaf pan. Bake 55 minutes or until a toothpick comes out clean (she said it took about an hour and five minutes for hers- the 55 minute estimate was for the original recipe, which used eggs. I'm really not sure how much different times are when you used substitutes, but my mother isn't a vegan cook unless it's for me, and this was very tasty- so an hour and five minutes it is!). Let cool for 15 minutes before removing from pan.
