I changed it to this...
Cherry Chestnut Chocolate Beer Cake!
2 cups packed dark brown sugar (I only had one cup of brown, so I used a cup of brown and a cup of Florida Crystals)
1 cup Earth Balance (or whatever butter-sub you want), softened
2 Ener-G Eggs
1/4 teaspoon cinnamon
3 cups sifted all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 - 1 cup chopped roasted chestnuts
2 cups chopped pitted cherries (I used a jar of pitted sour cherries in water, for pies)
1/4 - 1/2 cup chocolate chips
2 cups Cherry beer
Combine brown sugar and "butter" in a mixing bowl. Cream until smooth and well-blended. Add the "eggs", one at a time, beating well after each addition.
Sift cinnamon, flour, baking soda and salt together. Add remaining flour mixture alternately with beer to creamed mixture, blending well after each addition. Stir in cherries, chestnuts, and chocolate chips. Spoon batter into two large, well-"buttered" and floured cake pans. (Had extra, so I made six cupcakes, too.)
Bake in preheated 350-degree oven for about 40 minutes (cupcakes took less time) or until cake tester comes out clean. Let cool completely before frosting.
I whipped up some cherry frosting, and I used some cherry preserves in the middle of the layers, and put the frosting on the tops and sides.
I might be able to post a picture later, if a friend is willing to take a pic for me.
EDIT: Here is a messy picture! it was actually not as crumbly as it looks - it was moist, so stuck to the bottom of the plate.
