3 cups peeled, cored, and sliced Granny Smith apples (3 to 4 apples)
2 cups fresh cranberries
1 teaspoon finely minced orange zest
1/2 teaspoon salt
3/4 cup granulated sugar
1/2 cup crushed pineapple
1/2 cup soy butter, melted
1 teaspoon salt
1 cup packed light brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1 cup coarsely choppped pecans
1 cup rolled oats
2/3 cup all-purpose flour
Preheat oven to 350 degree F.
1. For the Filling: In a large bowl, toss the apples and cranberries with zest and salt. Pour into greased 9 x 13-inch baking dish; pour the granulated sugar evenly over the fruit mixture.
2. For the Topping: In a food processor, pulse all of the topping ingredients until the mixture is crumbly and the soy butter is coated.
3. To Assemble: Spoon the topping mixture evenly over the suguared fruit. Bake in the preheated oven until the topping is golden and the fruit is bubbling, about 45 minutes.
