I've been trying to make the perfect batch of No Bake Cookies with different vegan recipes for a long time.
But, no matter what I try, my cookies don't harden. They stay relatively gooey and may solidify a little around the edges, but that's it. Before I was vegan, I had no bake cookies that were pretty dry and crumbly and delicious. How do I do this, vegan style?
Here's the recipe I tried most recently:
# 2 cups vegan sugar
# 1/2 soymilk
# 1/4 cup vegan margarine
# 1/3 cup of cocoa
# 1/2 cup peanut butter
# 1 cup of dry coconut flakes
# 1 1/2 teaspoon pure vanilla extract
# 2 1/2 cups of oatmeal
Boil first four ingredients for 2 minutes, remove from heat, add the rest and plop onto wax paper in spoonfuls. Pretty basic.
Any advice would be greatly appreciated.
