it's a delicious way to use up apples and it tastes like winter. since it certainly took long enough to feel like winter here, it's a great accompaniment to the cold weather! did I mention how amazing the apartment smells? yum.
Ingredients (use vegan versions):
2 cups chopped apples with skin
1 cup vegan brown sugar
1/4 cup oil (canola, peanut, etc.)
1/4 cup chopped walnuts
1/4 cup raisins
1 teaspoon vanilla
1/3 cup applesauce
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
Mix oil, vegan sugar, and applesauce. Add rest of ingredients and mix well. Pour into 8 x 8 cake pan. Bake at 350 degrees for 45 minutes.
Preparation time: 1 hour
personal note: I didn't chop the apples finely, but instead used small chunks because apples and cinnamon is one of my very favorite combinations. the cake really looks gorgeous when it comes out of the oven, and the ingredients really are warming when combined. it's also a moist cake- I think I'm going to pair it with apple butter (and maybe a nice mug of coffee).
