Apple Salad: There's a Party in My Mouth!!

Apple Salad Apple Salad

1 green apple (or any other tart apple)
1/4 small red/purple onion
1 handful pecans
3 sprigs fresh parsley
1 Tbl. Maple Syrup
1 Tbl. Lemon juice
2 Tbl. Olive oil
1 tsp. apple cider vinegar
1/2 tsp. dried rosemary
a couple shakes salt and pepper

-Slice apple and onion as thinly as possible, place in bowl and mix with lemon juice, vinegar and oil.
-Toast the pecans lightly on the stove. Add to bowl when done.
-Chop parsley and add to bowl.
-Throw in the remaining spices and mix.

Alterations: Pick onions that are more flat as oppose to round, they will be sweeter. Add carrots if your onions weren't as sweet as you thought. Shallots can be subbed for onions and your favorite nut for pecans.

The sour and spicy was nicely met with the cooling and sweet of the parsley and maple.
The pecans added a wonderful softer texture to contrast the crispiness of the apple. The warm and cool was also a wonderful contrast.
It was like there was a party in my mouth with all the flavors and texture having a good time! I forgot to mention the colors! So beautiful! Go make it.
