Bean and Basil Burgers
~Even the children enjoy these burgers. Chop all the ingredients together in a food processor of blender (if you want them to look homogenous). Serve them on buns with condiments.
- 2 cups cooked black beans
- 2 cups cooked brown rice
- 3 tbsp chopped black olives
- 2 tbsp chopped fresh basil
- 2 tbsp tomato paste
- 1/2 tsp salt
- 1 tbsp crushed red pepper flakes (optional)
*Makes 8-10 generous servings
1 - Preheat the overn to 350 degrees
2 - Mix all the ingredients
3 - Form the mixture of burgers with your hands. Wet your hands if the mixture sticks to them
4 - Bake on greased cookie sheet for 10-15 minutes.
I left out the optional red pepper flakes and had to use dried basil as I couldn't find fresh and they tasted quite alright! I was going to make the burgers small to get the 8-10 the recipe says will come out of it but my Aunt encouraged me to make them bigger so we only got six burgers. Wetting your hands is a must at step 3 - this stuff is really sticky!!
