christmas casserole

i was looking online for a recipe for this casserole my mom always makes for christmas. it's a swedish tradition, and it's usually made with potatoes, onions and anchovies. i was very excited when i found a vegetarian version of it, and have to share it with you. i translated it from swedish, but the link is here if anyone is curious.

10 potatoes, cut into strips
1 yellow onion, sliced
1 1/2 tablespoon bread crumbs
5 sliced mushrooms
1/8 tsp cinnamon
1/8 tsp black pepper
1/2 tsp salt
1/2 tablespoon margarine

for sauce:
3 1/2 dl or 1 1/2 cups cream (silk creamer would probably work well)
1/4 tsp black pepper
3 whole cloves
3/4 teaspoon salt

simmer the cream with cloves, pepper and salt. take it of the heat and let sit for about 15 minutes. remove the cloves and add the sliced onion. simmer for a few minutes.

in a separate pan, sautee the mushrooms in the margarine. season with pepper, cinnamon and salt.

put potatoes, mushrooms and the sauce (with onions still in it) in a casserole dish. top with breadcrumbs and bake in the oven at 400 degrees for about one hour.
