krismas eve dinner & iced sugar cookies






My family ate krismas dinner today. I decided to whip up something simple and satisfying. I made vegan gravy (http://www.boutell.com/vegetarian/gravy.html), mashed potatoes(no recipe needed), biscuits(http://www.boutell.com/vegetarian/biscuits.html), stuffing(I don't want to post the recipe, it was awful), and corn(in a can;p). I added LightLife's Smart Turkey in the gravy. It was delicious.
I also had a clementine because I can't eat enough of those.

Sugar cookies & fudge were made last night.
























Mum's Sugar Cookies
3/4 c. dry sweetener
1 c. margarine
egg replacer for one egg
1 tsp. vanilla
1/2 tsp salt
2 1/4 c. flour
1/4 tsp baking soda

Preheat oven to 375 F. In large bowl, stir together the sweetener, margarine, egg replacer, and vanilla. Stir in the salt, flour, and baking soda and mix till combined. (Here I say you should put it in the fridge). Divide dough in half and roll out each half on a lightly floured surface. Cut into desired shapes and bake 8-10 minutes until lightly golden on the edges.

The icing is a confection sugar, soy milk, and dye. I also found a recipe for it in the memories but it seems it is gone now. It was under "Valentine's Day cookies and icings".
